Is there something not to love in the process of fermentation?

Yes, it's challenging, because not always goes as planned.

But that is the nature of life.

Beings just being, without any control.

Feeding themselves and transforming themselves and the mean that they are in.

The beauty of the transformation of the form, the smell, the texture, the sounds.

Pure poetry.

This one is a spelt fermentation batch. "Isco" in Portuguese or "massa mãe ". I made another one with rice and buckwheat flour. So different in many ways and the nature is the same in both.
